8 Affordable Chicken Recipes to Save Money
Feeding a family on a budget is always a challenge. Making something budget-friendly that is healthy and your family will actually eat can seem near impossible some days.
Chicken is versatile, easy to prepare and affordable-especially if you stock up when it goes on sale. Here are some ideas to inspire you. All of these recipes require a 9×13 pan and should be baked at 350°F for about an hour (or until internal temp reaches 180°).
Honey Mustard Chicken
This one is easy and just sweet enough to entice your picky eaters. Mix together ½ cup each of honey and prepared mustard, along with 4tbsp of melted butter. Slather on chicken parts.
Chicken Parmesan
Coat chicken pieces in milk and then dip in Italian breadcrumbs. Place in pan and cover with tomato sauce. Sprinkle mozzarella cheese.
Mexican Chicken
Cover chicken parts in salsa and a half can of black beans drained and rinsed. Sprinkle with Monterey Jack cheese.
Caesar Chicken
Coat chicken in Caesar salad dressing and sprinkle with parmesan cheese.

This one will appeal to those who prefer little seasoning, but like the flavour of roasted chicken. Drizzle 2tbsp of olive oil on chicken parts and sprinkle with sea salt and cracked peppercorns.
Cajun Chicken
Dice a green pepper, a carrot and a small onion. Sprinkle over chicken parts, along with 2tbsp of Cajun seasoning. For those who like a little more heat, mix 1tbsp of tabasco in with the veggies before you put them on the chicken.
Creamy Chicken
Slice four potatoes thinly and line pan. Place chicken parts on top and cover with cream of chicken soup. Sprinkle cheddar cheese on top.
