Two freezer slow cooker meals to try this week
In the world of convenience cooking, you rely heavily on freezer meals and on your slow cooker. What if you relied on them both at the same time to provide you with a healthy, flavorful low-cost meal? It’s the meal prep bonanza!
Instead of hitting the drive thru on your way home from school/practice/lessons/work, spend a few hours on the weekend prepping freezer slow cooker meals that you can dump in that slow cooker on your way out the door. Press the button and supper is ready when you are!
Chicken lime fajitas
In a frying pan, sauté a minced onion in a tbsp. of oil for a few minutes, until translucent. Add ½ tsp each of cumin, chili powder, coriander and paprika, five cloves of minced garlic and salt and pepper to taste. Simmer for another couple of minutes. Use a splash of chicken broth to get any brown garlic bits off the bottom. Add four chicken breasts and cook until heated through. Shred chicken with fork. Take mixture and put in sealable bag in the freezer.
When you go to cook, put in slow cooker frozen and add 1 tbsp. chopped cilantro and the juice of two limes. Cook on low for 4-5 hours. You can use the mixture, along with your favourite fixings, to make yummy fajitas.
Pot roast with green beans
This small ingredient list means little prep and lots of time to do other things?
In a Ziploc bag, put a 2lb blade roast (or other tougher meat cut) with a pound of green beans, cleaned and trimmed along with a packet of onion soup (toss to coat). Place whole bag in freezer.
When ready to use, thaw bag overnight in fridge. Put contents of bag in slow cooker, along with a cup of water. Cook on low for 8 hours. When cooked, either shred meat or slice thinly. Serve over mashed potatoes with remaining sauce.
