You do have time for breakfast!
Ok moms. We are all crazy busy in the mornings, flying around getting kids out the door to school and daycare, while trying to organize ourselves for the workday ahead (side note: I always thought a soundtrack against morning chaos would bring some levity to the situation).
What happens often, even though you make sure that your kids are well-fed before they start their day, is that you fail to feed yourself properly. And you either end up completely starving by mid-morning, or else you pick up something on the way, which leads to extra, unnecessary spending.
Here are some quick, easy and nutritious breakfast ideas when you are on the go.
Egg Muffins
No, not Egg McMuffin, but actual egg muffins, loaded with good stuff and completely portable for your morning commute. Make a batch of these one evening, and then you’ve got breakfast for several days.
Chop up an assortment of veggies (onions, peppers, mushrooms, etc.) and/or meats. Beat six eggs with a little bit of milk.
In a muffin tin, place veggie mixture and shredded cheese. Fill muffin cups with egg mixture, about ¾ full. Bake until eggs are set, about half an hour. You can freeze these ones too!
Peanut Butter Sandwich
Seriously. For breakfast.
Peanut Butter is high in protein, which should be enough to curb your hunger ‘til lunchtime. Slap a layer on some multi-grain bread and you are good to go.
Doesn’t get easier (or cheaper) than that!
Breakfast Burrito
Scramble some eggs the night before and load up a tortilla in the morning, along with some veggies and some salsa. Throw in the microwave for about 30 seconds, and breakfast is served.
Instant Oatmeal
Notice the word “instant” here? Quick, easy and loaded with protein and fibre, this is an excellent (and cheap) breakfast choice.
You can even bring it with you to the office and pop it in the microwave there.
